Herbed Honey Rissoles


I thought I would share with you our favourite rissole recipe. Tonight I was feeling tired and really just wanted to cook something extra quick like spaghetti bolognaise but with no tinned tomatoes in the pantry I had to go back to the original plans. In the end dinner was made faster than I thought but with probably a few more dishes. One of my hints for making this even easier is to prepare in advance. The recipe asks for stale breadcrumbs so when our bread is getting to dry to eat for sandwiches I put in through the food processor and then into sealed containers in the freezer. I label them with the date and amount of bread crumbs in each container so when a recipe asks for stale breadcrumbs I save time by getting out the ones I've already pre-prepared. So here's the recipe given to me by mother-in-law.

Ingredients
1 tsp dried basil leaves
1 tsp dried tarragon leaves
2 tbls honey
2 tbls cream
1 tbls soy sauce
1 onion finely chopped (I omit this)
1 clove garlic crushed
2 chicken stock cubes crumbled
1/2 cup stale breadcrumbs
1 egg lightly beaten
500g beef mince *Edited, forgot the beef mince!*

Mix all ingredients together and shape into patties. Fry in pan with a little olive oil until browned on both sides.

P.S. Oops I forgot there is 500 grams of beef mince. Thanks Jacqueline:)

    We make a recipe very close to that, I do a big batch and freeze it. My recipe says sour cream and it freeze's fine.
    PS...Did you leave out the meat part of your recipe, or is it a veg one?
